How to Make Delicious and Healthy Oatmeal Breakfast Cookies
Oatmeal breakfast cookies are a fantastic way to start your day, combining the convenience of a cookie with the wholesome goodness of oats and other nutritious ingredients. We use all organic ingredients in our house, more on that later. These “breakfast” cookies are actually perfect for busy mornings, snack times, or a healthy treat. Here's a simple guide to making oatmeal breakfast cookies that are both delicious and good for you!

Ingredients
Here's a basic list of ingredients to get you started. Feel free to customize based on your preferences!
2 cups of rolled oats: Provides a chewy texture and is packed with fiber.
1 cup of mashed bananas or unsweetened applesauce: Natural sweeteners and binders.
1/2 cup of nut butter (peanut, almond, etc.): Adds healthy fats and protein.
1/4 cup of honey or maple syrup: Optional for additional sweetness.
1 teaspoon of vanilla extract: For flavor.
1 teaspoon of cinnamon: Adds a warm, comforting flavor.
1/2 teaspoon of baking powder: Helps the cookies rise slightly.
Pinch of salt: Enhances the flavors.
Optional mix-ins: Chocolate chips, dried fruits, nuts, seeds, etc.
I usually use two large bananas (ripe), or one large banana and an applesauce pouch. Sometimes I add the baking powder and sometimes not, my kiddos don’t seem to notice a difference. I have used raisins, chocolate chips, strawberries, blueberries, and raspberries as the add-ins and while they have all been good, my kiddos prefer it with raisins (I know…even above chocolate??) I buy all these ingredients at Costco and/or my local Publix!




Instructions
Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix the Wet Ingredients: In a large bowl, combine the mashed bananas or applesauce, nut butter, honey or maple syrup, and vanilla extract. Mix until smooth.
Add the Dry Ingredients: Stir in the rolled oats, cinnamon, baking powder, and salt until well combined. The mixture should be thick and sticky.
Fold in the Mix-ins: Add your choice of mix-ins, such as chocolate chips, dried fruits, or nuts. Fold gently to evenly distribute them throughout the batter.
Form the Cookies: Using a spoon or cookie scoop, drop the dough onto the prepared baking sheet. Flatten each cookie slightly with the back of a spoon or your hand, as they won't spread much during baking (sometimes I forget this part, but they really are better when you flatten them a bit).
Bake: Bake for 12-15 minutes (12 is perfect for mine), or until the edges are golden and the cookies are set. Be careful not to overbake, as they can become dry.
Cool and Enjoy: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy your oatmeal breakfast cookies with a cup of coffee or tea, or pack them for an on-the-go snack!
Storage
Store your oatmeal breakfast cookies in an airtight container at room temperature for up to a week or freeze them for longer storage. They can be reheated in the microwave for a quick, warm breakfast or snack.
